It has been a while everyone, but I am back in the kitchen and ready to make an awesome crumble! My mom brought home some strawberries the other day and I decided to make something. This crumble is buttery, crunchy, fruity and of course, delicious. Summer is almost here and I will be baking a lot, especially with awesome summer fruit that i just love! However, there is also going to be delicious and devilish chocolaty recipes which are sure to take away your beach body.

Ingredients (for about 4 individual crumbles):
  • a big handful of strawberries (cca 60g)
  • 2 tbsp sugar, divided
  • ¼ cup + 1 tbsp all purpose flour
  • 2 tbsp cold butter
  • pinch of salt
  • 2 tsp almond flakes
  • 1 tsp oats

Remove the stem from your strawberries and then quarter them. Put them in a bowl and add a tablespoon of sugar, I also added some more flour and a little bit of rum to really bring out the flavor.

For the actual crumble, use the tips of your fingers to rub the cold butter into the flour until you get a breadcrumb like mixture with still some pea sized pieces of butter. Then add sugar, almonds, oats, salt and a small amount of cold water to bind everything together. Put it in the freezer for a few minutes just until you clean up and divide the strawberry mixture in ramekins. Sprinkle the top with crumble mix. There will be some left, so put that on a tray lined with aluminum foil and bake under the ramekins for 15 minutes in an 220°C /420°F. After the crumbles are baked, sprinkle some more of the baked mixture and serve with vanilla ice cream. Enjoy!
